It's pretty ghetto, but no, there's nothing wrong with it. It's actually quite like the air method (but assumably much slower.)
The removal of the old grip tape can be quite tedious... the older the worse it seems to be.
The only thing you may see (regardless of method) is slipping if the inside core of the grip is equal to or less than the diameter of the butt of the shaft.
I always put a layer of masking tape on, just to be on the safe side.
