Last month she finally joined my golf club – a miracle or what?
The only problem is, she's getting quite keen and hits the ball well, so the edge has been taken off my exhilaration by the thought that one day she might get a lower handicap than mine.
Anyone any suggestions how to prevent this whilst still encouraging her?

My first and best suggestion is to check your ego. If that isn't possible, try only letting her play with range balls, or distance balls. That way, she'll never hold a green.
