For the record, grooves don't add or remove spin. Grooves help channel energy-draining material away from the ball and clubface. Also, every time you hit the ball, it spins.

As for generating backspin, you need to make clean contact with the ball. The loft of the club and the 'cleanliness' of the contact are what generate spin - this whole 'pinching the ball between the club and the turf' thing.
