You should be hitting the ball "on the up" with a driver...it all depends on how you are doing it.
If you are scouping (breaking down of impact wrist) then you are basically lobbing the ball into the air.

As was said, if you chop down on the ball it will pop up and go nowhere also.

Try some tape on the face (or talc on the ball, etc) to see where on the face you are hitting the ball.

Try a much slower swing and concentrate on hitting the ball with your hands before the clubhead, just to ingrain the correct feeling.

10.5 shouldnt be giving you any height issues.
How far do you hit the rest of your clubs?
Another question, is there much difference between how far you hit your fairway woods from the Tee versus the fairway?
If you use an "imaginary" ball several inches behind the "real" ball and hit down and out using the imaginary ball as the low point of your swing (pretend the real ball isn't there), your weight transfer and ball trajectory should be OK.

If your intention is to hit "up" on the real ball, the weight will tend to remain with the back foot and most likely you'll scoop the ball.

Don't change shafts, the Aldila NV has a high kick point meaning it flexes more towards the grip which would help produce a lower ball flight, not higher. A few people seem to be confused about this. One way it might be lowered is if you got a stiff shaft instead of regular, but that is all dependent on your swing speed. The most effective way of achieving what your looking for is probably getting a lesson. If you find the right pro I'm sure he could help you with what your looking for. I think your clubs are fine you just might not be getting your weight off of your back foot, this is just a guess without seeing your swing, but I wouldn't change equipment.
