i think that using the one club round the green for all shots was what most people did till Dave Pelz book "the short game" come out and players started carrying 3 or 4 wedges. you only have to go back about 15 years to try and find a gap wedges and they were very hard to find and now you can get wedges from about 47% to 65% and everything between.
you now can tailor your golf bag like you never could 15 or 20 years ago.
i think thats why you have a split in people using the one iron round the green and others that use what ever club will give them the run to the hole.
i don't think one system is better than another but i think the Pelz system breaks it down into calculated distances and you don't need to have as a much "Touch" round the green as you do with the one club system.
i think if you like to use say a 7 iron round the green then you often turn that 7 iron into say a 9 iron by opening the face and its more about touch and feel and you need soft hands.
use what works for you and what you find easiest.
